  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme or rosemary
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/3 cup grated Parmesan cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large bowl, whisk together olive oil, lemon juice, garlic, oregano, thyme, salt, and pepper.
  2. Add chicken pieces and toss to coat. Cover and marinate in the refrigerator for at least 30 minutes (up to 4 hours).
  3. Preheat grill to medium-high heat. If using wooden skewers, soak them in water for 30 minutes to prevent burning.
  4. Thread marinated chicken onto skewers and sprinkle evenly with grated Parmesan.
  5. Grill skewers for 10–12 minutes, turning occasionally, until chicken is cooked through and slightly charred.
  6. Remove from grill, garnish with fresh parsley, and serve hot.
