Grilled Chicken with Potatoes and Green Beans

A wholesome and flavorful grilled chicken dish served with tender potatoes and crisp green beans, perfect for a balanced weeknight meal.

  • 4 boneless, skinless chicken breasts
  • 1 pound baby potatoes, halved
  • 12 ounces green beans, trimmed
  • 3 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • Lemon wedges for serving (optional)

Instructions

  1. Preheat grill to medium-high heat.
  2. In a large bowl, toss the potatoes with 1 tablespoon of olive oil, salt, pepper, and half of the garlic, thyme, and rosemary.
  3. Place potatoes in a grill basket or wrap in foil and grill for 15–20 minutes, turning occasionally, until tender and golden.
  4. Meanwhile, season chicken breasts with remaining olive oil, garlic, thyme, rosemary, salt, and pepper.
  5. Grill chicken for 6–8 minutes per side, or until internal temperature reaches 165°F (75°C).
  6. While chicken is grilling, steam or blanch green beans for 3–4 minutes until just tender, then toss with a little olive oil, salt, and pepper.
  7. Serve grilled chicken with roasted potatoes and green beans. Garnish with lemon wedges if desired.

Notes

  • Marinate the chicken in the seasoning for 30 minutes for extra flavor.
  • Baby red or Yukon gold potatoes work well in this recipe.
  • Add a sprinkle of parmesan over the green beans for a flavor boost.
