Grilled Cilantro Lime Chicken is a zesty and vibrant dish featuring juicy grilled chicken marinated in fresh lime juice, cilantro, garlic, and spices. Ideal for healthy meals, BBQs, or meal prep.

Ingredients

  • 4 boneless, skinless chicken breasts or thighs
  • 1/4 cup fresh lime juice
  • 1/4 cup chopped fresh cilantro
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp ground cumin
  • Salt and pepper to taste
  • 1 tbsp honey (optional)

Instructions

  1. In a bowl, whisk together lime juice, chopped cilantro, garlic, olive oil, cumin, salt, pepper, and honey if using.
  2. Add chicken to the marinade and coat well. Cover and refrigerate for at least 30 minutes or up to 8 hours.
  3. Preheat grill to medium-high heat.
  4. Remove chicken from the marinade and grill for 5–7 minutes on each side or until the internal temperature reaches 165°F (74°C).
  5. Let the chicken rest for a few minutes before slicing. Serve with desired sides.
