A simple yet flavorful dish featuring juicy grilled chicken breasts marinated in garlic and herbs, served with a fresh and vibrant tomato salad—perfect for a light and healthy meal.

  • 4 boneless, skinless chicken breasts
  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 tablespoon lemon juice
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 cups cherry tomatoes, halved
  • 1/4 red onion, thinly sliced
  • 2 tablespoons fresh basil, chopped
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon olive oil (for salad)

Instructions

  1. In a bowl, mix olive oil, garlic, lemon juice, oregano, thyme, salt, and pepper.
  2. Pound chicken breasts to even thickness and coat with marinade. Let sit for at least 20 minutes (or up to 2 hours).
  3. Preheat grill or grill pan to medium-high heat.
  4. Grill chicken for 5–6 minutes per side or until fully cooked and internal temperature reaches 165°F (75°C).
  5. While chicken cooks, combine cherry tomatoes, red onion, basil, balsamic vinegar, and olive oil in a bowl. Toss gently and season with salt and pepper.
  6. Serve grilled chicken alongside or over the tomato salad. Garnish with extra herbs if desired.

Notes

  • Chicken can also be pan-seared if a grill isn’t available.
  • Use heirloom tomatoes for more color and flavor variety.
  • Marinate overnight for maximum flavor.
