4 boneless, skinless chicken breasts
1cup barbecue sauce
4 pineapple rings (fresh or canned)
1 tablespoon olive oil
Salt and pepper to taste
Optional: chopped fresh cilantro or green onions for garnish
Instructions
Preheat grill to medium-high heat and lightly oil the grates.
Season chicken breasts with salt and pepper.
Brush chicken with olive oil and place on the grill.
Grill chicken for 5–7 minutes per side, or until internal temperature reaches 165°F (74°C).
During the last few minutes of cooking, brush chicken generously with barbecue sauce.
While chicken cooks, grill pineapple rings for 2–3 minutes per side, until caramelized grill marks appear.
Top each chicken breast with a grilled pineapple ring.
Remove from grill and let rest for 5 minutes.
Garnish with cilantro or green onions if desired and serve warm.
Notes
Use a smoky or spicy BBQ sauce to add more depth of flavor.
Fresh pineapple gives the best caramelization but canned works too.
Great served with rice, grilled veggies, or a fresh salad.
