Grilled Shrimp and Avocado Crostini is a light and flavorful appetizer featuring juicy shrimp, creamy avocado, and crispy toasted baguette slices. Perfect for parties or summer gatherings.

Ingredients

  • 1 baguette, sliced into 1/2-inch rounds
  • 2 tbsp olive oil
  • 1 clove garlic, halved
  • 1 lb large shrimp, peeled and deveined
  • 1 tbsp lemon juice
  • 1 tsp paprika
  • Salt and black pepper to taste
  • 2 ripe avocados, mashed
  • 1 tbsp lime juice
  • 1 tbsp fresh cilantro, chopped
  • Optional: red pepper flakes for garnish

Instructions

  1. Preheat grill or grill pan over medium-high heat.
  2. Brush baguette slices lightly with olive oil and grill until golden brown and crisp. Rub each slice with garlic for flavor.
  3. In a bowl, toss shrimp with olive oil, lemon juice, paprika, salt, and pepper.
  4. Grill shrimp for 2-3 minutes per side until pink and cooked through.
  5. In a small bowl, mash avocados with lime juice, salt, pepper, and cilantro.
  6. Spread avocado mixture on toasted baguette slices.
  7. Top each crostini with a grilled shrimp.
  8. Garnish with red pepper flakes if desired and serve immediately.
