1cup whole wheat flour or all-purpose flour
1/2 tsp baking soda
1/4 tsp salt
1/2cup coconut oil or unsalted butter, softened
1/2cup brown sugar or coconut sugar
2 large eggs
1 tsp vanilla extract
1/2cup chopped pecans
1/2cup semi-sweet or dark chocolate chips
Instructions
Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large bowl, whisk together oats, flour, baking soda, and salt.
In another bowl, cream together coconut oil (or butter) and sugar until smooth.
Beat in eggs and vanilla extract until well combined.
Gradually mix in dry ingredients until a dough forms.
Fold in chopped pecans and chocolate chips.
Drop rounded tablespoons of dough onto the prepared baking sheet, spacing evenly.
Bake for 10–12 minutes, or until edges are golden brown.
Cool on baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
