Buttery, tender shortbread-style cookies cut into heart shapes and filled with sweet fruit jam, perfect for holidays or gifting.

Ingredients

Scale
  • 1 cup unsalted butter, softened
  • 2/3 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1/4 tsp salt
  • 1/2 cup strawberry or raspberry jam
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream together softened butter and sugar until light and fluffy.
  3. Beat in the egg and vanilla extract.
  4. In a separate bowl, whisk together flour and salt.
  5. Gradually add the dry mixture to the wet ingredients to form a soft dough.
  6. Divide dough in half, wrap in plastic, and chill for 20–30 minutes.
  7. Roll dough to about 1/4-inch thickness on a floured surface.
  8. Cut out heart-shaped cookies. Cut a smaller heart from the center of half of the cookies (these will be the tops).
  9. Place cookies on the baking sheet and bake for 8–10 minutes or until edges are lightly golden.
  10. Cool completely. Dust the cut-out tops with powdered sugar if desired.
  11. Spoon a small amount of jam onto each bottom cookie and gently press a top cookie over it to sandwich.

Notes

  • Use seedless jam for the cleanest appearance.
  • Do not overbake—cookies should stay pale for a soft texture.
  • Try different jams like apricot, blueberry, or cherry.
  • Chill dough again after cutting if cookies spread too much.
