Hearty Beef Stew with Vegetables is a comforting and filling dish made with tender beef chunks, root vegetables, and a rich, savory broth—perfect for cold days or family dinners.

  • 2 lbs beef chuck, cut into 1-inch cubes
  • 2 tablespoons vegetable oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 1 cup red wine (optional, can substitute with more broth)
  • 3 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 2 bay leaves
  • 4 carrots, peeled and chopped
  • 3 potatoes, peeled and diced
  • 2 stalks celery, chopped
  • 1 cup frozen peas
  • Salt and pepper to taste
  • 2 tablespoons all-purpose flour (optional, for thickening)
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Heat vegetable oil in a large pot or Dutch oven over medium-high heat.
  2. Season beef with salt and pepper, then sear in batches until browned on all sides. Remove and set aside.
  3. In the same pot, add chopped onion and cook for 4–5 minutes until softened. Add garlic and cook for 1 more minute.
  4. Stir in tomato paste, then deglaze the pot with red wine, scraping up any brown bits from the bottom.
  5. Add beef broth, Worcestershire sauce, thyme, rosemary, bay leaves, and the seared beef. Bring to a boil, then reduce heat and simmer, covered, for 1 hour.
  6. Add carrots, potatoes, and celery. Simmer for another 30–40 minutes or until vegetables and beef are tender.
  7. If a thicker stew is desired, mix flour with a small amount of water to make a slurry and stir into the stew. Simmer for 5–10 more minutes until thickened.
  8. Stir in peas and cook for another 5 minutes.
  9. Remove bay leaves, garnish with fresh parsley, and serve warm.

Notes

  • For deeper flavor, marinate the beef in red wine and herbs for a few hours before cooking.
  • This stew tastes even better the next day.
  • Serve with crusty bread or over mashed potatoes for a heartier meal.
