Hearty Cabbage Roll Soup is a comforting one-pot meal inspired by traditional stuffed cabbage rolls. Loaded with ground beef, tender cabbage, rice, and a savory tomato broth, it’s an easy and satisfying dish perfect for chilly nights.

Ingredients

  • 1 lb ground beef (or ground turkey)
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups green cabbage, chopped
  • 1 large carrot, peeled and diced
  • 1 (14.5 oz) can diced tomatoes
  • 1 (15 oz) can tomato sauce
  • 4 cups beef broth
  • 1/2 cup uncooked white rice
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon paprika
  • 1/2 teaspoon dried thyme
  • Salt and black pepper, to taste
  • Chopped fresh parsley, for garnish (optional)

Instructions

  1. In a large pot or Dutch oven, heat olive oil over medium heat. Add onion and cook until soft, about 3–4 minutes.
  2. Add garlic and ground beef. Cook until beef is browned and fully cooked, breaking it up as it cooks. Drain excess grease if needed.
  3. Stir in the chopped cabbage and carrots. Cook for 5–6 minutes until slightly softened.
  4. Add diced tomatoes, tomato sauce, beef broth, rice, Worcestershire sauce, paprika, thyme, salt, and pepper.
  5. Bring the soup to a boil, then reduce heat to a simmer. Cover and cook for 25–30 minutes, or until rice and vegetables are tender.
  6. Adjust seasoning if needed. Garnish with chopped parsley before serving.

Notes

  • Use brown rice for extra fiber, but increase cook time by 10–15 minutes.
  • This soup freezes well—cool completely before storing in freezer containers.
  • Swap ground beef for turkey or plant-based crumbles for a lighter version.
  • Add a splash of vinegar or lemon juice for extra brightness at the end.
