Hearty Tomato and Sausage Pasta is a comforting, flavorful dish made with savory Italian sausage, a rich tomato sauce, and tender pasta. It’s perfect for weeknight dinners or feeding a hungry crowd.

  • 12 oz pasta (penne or rigatoni)
  • 1 tbsp olive oil
  • 1 lb Italian sausage (mild or spicy), casing removed
  • 1 small onion, finely chopped
  • 3 garlic cloves, minced
  • 1 can (28 oz) crushed tomatoes
  • 2 tbsp tomato paste
  • 1 tsp dried basil
  • 1/2 tsp dried oregano
  • 1/4 tsp red pepper flakes (optional)
  • Salt and black pepper to taste
  • 1/4 cup grated Parmesan cheese
  • Fresh parsley or basil, chopped (for garnish)

Instructions

  1. Cook pasta according to package directions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add sausage and cook, breaking it up with a spoon, until browned and cooked through.
  3. Add chopped onion and cook for 3–4 minutes until softened. Stir in garlic and cook for another 30 seconds.
  4. Add crushed tomatoes, tomato paste, basil, oregano, and red pepper flakes. Stir to combine.
  5. Simmer sauce for 15–20 minutes, stirring occasionally. Season with salt and pepper to taste.
  6. Add the cooked pasta to the sauce and toss to coat evenly.
  7. Sprinkle with Parmesan cheese and stir to combine.
  8. Serve hot, garnished with chopped parsley or basil.
