4 cod fillets (about 6 oz each)
1 cup fresh breadcrumbs
2 tablespoons fresh parsley, chopped
1 tablespoon fresh dill, chopped
1 tablespoon fresh chives, chopped
2 cloves garlic, minced
1 teaspoon lemon zest
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons olive oil
1 tablespoon Dijon mustard
Lemon wedges, for serving
Instructions
Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
In a bowl, combine the breadcrumbs, parsley, dill, chives, garlic, lemon zest, salt, pepper, and olive oil. Mix well until evenly moistened.
Pat the cod fillets dry with paper towels. Spread a thin layer of Dijon mustard on the top of each fillet.
Press the herb breadcrumb mixture onto the mustard-coated side of each fillet, gently pressing to adhere.
Place the cod fillets on the prepared baking sheet, crust-side up.
Bake for 12–15 minutes, or until the fish flakes easily with a fork and the crust is golden and crisp.
Serve immediately with lemon wedges on the side.
Notes
Use panko breadcrumbs for an extra crispy crust.
Substitute dried herbs if fresh are unavailable, using one-third the amount.
This recipe pairs well with roasted vegetables or a green salad.
