1 packet (2 1/4 tsp) instant yeast
1 1/4cups warm water
1 tbsp sugar
1 tsp salt
2 tbsp unsalted butter, melted
1 1/2cups shredded cheese (mozzarella, cheddar, or blend)
1/4cup baking soda (for boiling)
Coarse salt (for topping)
1 egg, beaten (for egg wash)
Instructions
In a mixing bowl, combine warm water, sugar, and yeast. Let sit for 5 minutes until foamy.
Add flour, salt, and melted butter. Mix and knead until smooth and elastic. Let rise in a warm place for 1 hour or until doubled.
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
Divide dough into 8 equal portions. Roll each into a rope and flatten slightly.
Place shredded cheese down the center, seal the dough around the cheese, and shape into pretzels.
Bring a large pot of water to a boil and add baking soda. Boil pretzels one at a time for 30 seconds, then transfer to baking sheet.
Brush with egg wash and sprinkle with coarse salt.
Bake for 15–18 minutes until golden brown. Serve warm.

Seal pretzels well to prevent cheese from leaking during baking.
