1 cup unsalted butter, softened
1 cup granulated sugar
1 large egg
1 tsp vanilla extract
2 1/4 cups all-purpose flour
1/2 tsp baking powder
1/4 tsp salt
Red and green colored sanding sugar
Instructions
Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
In a large bowl, cream together butter and sugar until light and fluffy.
Add the egg and vanilla extract, and beat until well combined.
In a separate bowl, whisk together flour, baking powder, and salt.
Gradually add dry ingredients to the wet mixture, mixing until a soft dough forms.
Roll dough into 1-inch balls and roll each ball in red or green sanding sugar.
Place on prepared baking sheets, spacing about 2 inches apart.
Flatten each ball slightly with the bottom of a glass or your fingers.
Bake for 10–12 minutes, or until the edges are just starting to turn golden.
Cool on baking sheet for 5 minutes, then transfer to wire racks to cool completely.
Notes
Make sure butter is fully softened for easy mixing.
Do not overbake to maintain the soft texture.
Try mixing red and green sugar on a few cookies for a fun twist.
