2cups unsweetened shredded coconut
1/2cup sweetened condensed milk
1 tsp vanilla extract
1 1/2cups semi-sweet or dark chocolate chips
1 tbsp coconut oil or butter (optional, for smoother chocolate coating)
Instructions
In a mixing bowl, combine shredded coconut, sweetened condensed milk, and vanilla extract. Mix until a sticky, cohesive mixture forms.
Shape into small balls or rectangular bars and place on a parchment-lined baking sheet.
Refrigerate or freeze for 30–60 minutes until firm.
Melt chocolate chips with coconut oil or butter in a heatproof bowl over a double boiler or in the microwave in 30-second intervals, stirring until smooth.
Dip each coconut bite into the melted chocolate, coating fully. Place back on the parchment-lined tray.
Chill again until chocolate is set, about 15–30 minutes.
Notes
For a sweeter version, use milk or white chocolate instead of dark.
Add chopped nuts to the coconut mixture for texture and flavor.
Toasted coconut can enhance the depth of flavor.
