Homemade Chocolate Coconut Bites are easy, no-bake confections featuring sweet coconut centers coated in rich chocolate—perfect for snacking or gifting.

Ingredients

  • 2 cups unsweetened shredded coconut
  • 1/2 cup sweetened condensed milk
  • 1 tsp vanilla extract
  • 1 1/2 cups semi-sweet or dark chocolate chips
  • 1 tbsp coconut oil or butter (optional, for smoother chocolate coating)

Instructions

  1. In a mixing bowl, combine shredded coconut, sweetened condensed milk, and vanilla extract. Mix until a sticky, cohesive mixture forms.
  2. Shape into small balls or rectangular bars and place on a parchment-lined baking sheet.
  3. Refrigerate or freeze for 30–60 minutes until firm.
  4. Melt chocolate chips with coconut oil or butter in a heatproof bowl over a double boiler or in the microwave in 30-second intervals, stirring until smooth.
  5. Dip each coconut bite into the melted chocolate, coating fully. Place back on the parchment-lined tray.
  6. Chill again until chocolate is set, about 15–30 minutes.

  • For a sweeter version, use milk or white chocolate instead of dark.
  • Add chopped nuts to the coconut mixture for texture and flavor.
