Ingredients

  • 2 boneless, skinless chicken breasts
  • 2 chipotle peppers in adobo sauce
  • 2 tablespoons honey
  • 2 tablespoons olive oil
  • 2 garlic cloves
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 2 cups cooked white rice
  • 1 avocado, sliced
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • 1 jalapeño, sliced
  • Fresh cilantro, for garnish

Instructions

  1. Blend chipotle peppers, honey, olive oil, garlic, cumin, and salt into a smooth marinade.
  2. Coat the chicken with the marinade and let it rest for at least 30 minutes.
  3. Grill or pan-sear the chicken until cooked through and slightly charred. Let it rest before slicing.
  4. In a skillet, sauté diced bell peppers and cherry tomatoes until tender.
  5. Slice fresh avocado and jalapeños.
  6. Assemble the bowl: start with a bed of rice, then add sliced chicken, sautéed veggies, avocado, and jalapeños.
  7. Garnish with fresh cilantro and serve immediately.
