8oz elbow macaroni or short pasta
1 tbsp olive oil
1/2 onion, diced
2 cloves garlic, minced
1lb ground beef or turkey
1 tsp Italian seasoning
1/2 tsp paprika
Salt and pepper to taste
1 can (15 oz) tomato sauce
1cup shredded cheddar cheese
1 box (8.5 oz) cornbread mix
1/3cup milk
1 large egg
2 tbsp honey
Instructions
Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
Cook pasta according to package directions, drain, and set aside.
In a large skillet, heat olive oil over medium heat. Sauté onion for 3–4 minutes, then add garlic and cook for 1 more minute.
Add ground meat and cook until browned. Drain excess fat if needed.
Season with Italian seasoning, paprika, salt, and pepper. Stir in tomato sauce and let simmer for 5 minutes.
Stir in cooked pasta and shredded cheese, then pour mixture into prepared baking dish.
In a separate bowl, mix cornbread mix with milk, egg, and honey until smooth.
Spread cornbread batter evenly over the pasta mixture.
Bake for 25–30 minutes, until cornbread topping is golden and cooked through.
Let sit for 5 minutes before serving.
Notes
Use a cast iron skillet to take the dish from stovetop to oven in one pan.
Add a pinch of red pepper flakes for spice.
Top with a sprinkle of cheese before baking for a gooey crust.
