1 lb carrots, peeled and cut into sticks or rounds
1 tbsp olive oil or butter
2 tbsp honey
1 tbsp soy sauce
1 tsp sesame oil
1 tbsp toasted sesame seeds
Salt and pepper to taste
Optional: chopped fresh parsley or cilantro for garnish
Instructions
Bring a pot of salted water to a boil. Add carrots and cook for 5–6 minutes until just tender. Drain and set aside.
In a large skillet over medium heat, add olive oil or butter. Once hot, stir in honey, soy sauce, and sesame oil.
Add the cooked carrots and toss to coat in the glaze. Cook for 3–4 minutes, stirring occasionally, until the glaze thickens slightly.
Season with salt and pepper to taste. Sprinkle with toasted sesame seeds and optional herbs before serving.
Notes
Use rainbow carrots for a colorful presentation.
Adjust sweetness by increasing or decreasing the honey.
This dish pairs well with roasted meats, tofu, or rice dishes.
