4 bone-in, skin-on chicken thighs
2 tbsp olive oil
3 tbsp honey
2 tbsp soy sauce
1 tbsp Dijon mustard
2 cloves garlic, minced
1 tsp fresh thyme, chopped
1 tsp fresh rosemary, chopped
Salt and pepper to taste
Fresh parsley, chopped (for garnish)
Instructions
Preheat oven to 400°F (200°C).
Pat the chicken thighs dry with paper towels and season both sides with salt and pepper.
In a small bowl, whisk together honey, soy sauce, Dijon mustard, garlic, thyme, and rosemary to create the glaze.
Heat olive oil in an oven-safe skillet over medium-high heat.
Sear the chicken thighs, skin-side down, for 4–5 minutes until golden and crispy. Flip and cook another 2 minutes.
Pour the glaze over the chicken and spoon some over the top to coat.
Transfer the skillet to the preheated oven and roast for 20–25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
Spoon the pan sauce over the chicken before serving and garnish with fresh parsley.
Notes
Use boneless thighs if preferred, but reduce cooking time accordingly.
Fresh herbs can be substituted with 1/2 tsp dried versions.
Serve with roasted vegetables, rice, or a simple salad.
