1 block firm tofu, drained and pressed
1/2 cup maple syrup
1 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp vanilla extract
1 tbsp cornstarch
3/4 cup unsweetened plant-based milk (such as almond or soy)
1 tbsp nutritional yeast (optional)
1 tbsp coconut oil or vegan butter, for frying
1 cup fresh berries (strawberries, blueberries, raspberries, etc.)
Powdered sugar, for garnish (optional)
Pinch of salt
Instructions
Cut the tofu into 1/2 inch thick slices resembling bread slices.
In a mixing bowl, whisk together the plant milk, maple syrup, cinnamon, nutmeg, vanilla extract, cornstarch, nutritional yeast (if using), and a pinch of salt to make the batter.
Dip each tofu slice into the batter, ensuring it’s fully coated.
Heat coconut oil or vegan butter in a non-stick skillet over medium heat.
Cook tofu slices for 3-4 minutes on each side or until golden and slightly crispy.
Remove from heat and glaze with a bit more maple syrup if desired.
Serve warm, topped with fresh berries and a dusting of powdered sugar if using.
Notes
Use extra firm tofu for best texture and press well to remove excess moisture.
You can marinate tofu in the batter for 10–15 minutes for deeper flavor.
Great with a dollop of vegan yogurt or a scoop of coconut whipped cream.
Adjust sweetness by varying maple syrup amount to taste.
