1 teaspoon vanilla extract
1 cup lemon curd (store-bought or homemade)
1 cup crushed shortbread cookies or graham crackers

Instructions
In a mixing bowl, whip heavy cream with powdered sugar and vanilla extract until soft peaks form.
Gently fold the whipped cream into the lemon curd until smooth and fully combined.
Spoon a layer of crushed cookies into the bottom of small parfait cups or jars.
Add a layer of lemon cream mixture over the cookies.
