These creamy and tangy lime cheesecake bars have a buttery graham cracker crust and a luscious lime filling. Perfect for summer or any citrus lover!

Ingredients

For the crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted

For the filling:

  • 16 oz (2 packages) cream cheese, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1/2 cup fresh lime juice
  • 1 tbsp lime zest
  • 1 tsp vanilla extract

For topping:

 

  • Powdered sugar, for dusting

Instructions

  1. Preheat oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. In a bowl, mix graham cracker crumbs, sugar, and melted butter. Press into the bottom of the pan.
  3. Bake crust for 8-10 minutes, then set aside to cool.
  4. In a large bowl, beat cream cheese and sugar until smooth.
  5. Add eggs one at a time, mixing well.
  6. Stir in lime juice, zest, and vanilla extract.
  7. Pour the filling over the crust and bake for 25-30 minutes, or until the center is set.
  8. Let cool completely, then refrigerate for at least 2 hours.
  9. Dust with powdered sugar before serving.

Notes

  • Use key limes for a stronger citrus flavor.

 

  • Refrigerate overnight for the best texture.
