For the crust:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
For the filling:
- 16 oz (2 packages) cream cheese, softened
- 3/4 cup granulated sugar
- 2 large eggs
- 1/2 cup fresh lime juice
- 1 tbsp lime zest
- 1 tsp vanilla extract
For topping:
- Powdered sugar, for dusting
- Preheat oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
- In a bowl, mix graham cracker crumbs, sugar, and melted butter. Press into the bottom of the pan.
- Bake crust for 8-10 minutes, then set aside to cool.
- In a large bowl, beat cream cheese and sugar until smooth.
- Add eggs one at a time, mixing well.
- Stir in lime juice, zest, and vanilla extract.
- Pour the filling over the crust and bake for 25-30 minutes, or until the center is set.
- Let cool completely, then refrigerate for at least 2 hours.
- Dust with powdered sugar before serving.
