Loaded Cheesy Bacon Ranch Potatoes are a rich, comforting side dish featuring tender baked potatoes topped with crispy bacon, savory beef, melted cheddar cheese, and creamy ranch dressing.

Ingredients

  • 2 lbs baby potatoes or Yukon Gold potatoes, sliced into thin rounds
  • 1 tbsp olive oil
  • Salt and pepper, to taste
  • 1/2 lb ground beef or cooked steak bites
  • 6 slices bacon, cooked and crumbled
  • 1 1/2 cups shredded cheddar cheese
  • 1/4 cup ranch dressing
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Wash and slice potatoes into thin rounds.
  3. Toss sliced potatoes with olive oil, salt, and pepper.
  4. Arrange potatoes in a single layer in a baking dish.
  5. Bake for 25–30 minutes, until tender and slightly golden.
  6. While potatoes bake, cook ground beef or steak bites in a skillet until browned. Set aside.
  7. Remove potatoes from oven and top with cooked beef, crumbled bacon, and shredded cheese.
  8. Return dish to oven and bake for an additional 10 minutes, or until cheese is melted.
  9. Remove from oven, drizzle ranch dressing over the top, and garnish with parsley if desired.
  10. Serve warm.
