1 box white or yellow cake mix (or equivalent homemade sponge cake batter)
3 large eggs
1/2cup vegetable oil
1 can (11 oz) mandarin orange segments, drained
1/2cup crushed pineapple (optional)
2cups whipped topping or stabilized whipped cream
1cup fresh strawberries, sliced
1 small box (3.4 oz) vanilla pudding mix (optional)
Instructions
Preheat oven and prepare the cake batter according to the package or homemade recipe instructions, adding drained mandarin oranges to the mix.
Pour into round or square cake pans and bake for 25–30 minutes, or until a toothpick comes out clean. Let cakes cool completely.
In a separate bowl, whip cream or prepare whipped topping. If desired, fold in vanilla pudding mix to stabilize.
Place one cake layer on a serving plate. Spread a layer of whipped cream over the top, followed by a layer of sliced strawberries and a few mandarin orange segments.
Repeat with second cake layer and remaining whipped cream and fruit.
Decorate the top with additional whipped cream, mandarin oranges, and strawberries.
Chill for at least 1 hour before serving for best texture and flavor.
