1/2 cup plant-based milk (e.g., almond, soy, oat)
2 tbsp nutritional yeast
1 tbsp cornstarch
1/2 tsp cinnamon
1/4 tsp turmeric (for color, optional)
1/4 tsp black salt (kala namak) or regular salt
2 tbsp maple syrup (for glaze)
1 tbsp vegan butter or oil (for cooking)
1 cup fresh berries (e.g., strawberries, blueberries, raspberries)
Powdered sugar (optional, for garnish)
Additional maple syrup (for serving)
Instructions
Press the tofu to remove excess moisture, then slice into 1/2-inch thick rectangles or triangles.
In a shallow bowl, whisk together plant-based milk, nutritional yeast, cornstarch, cinnamon, turmeric, and black salt.
Dip each tofu slice into the mixture, coating both sides well.
Heat vegan butter or oil in a non-stick skillet over medium heat.
Cook the tofu slices for 3–4 minutes on each side until golden and crispy.
Brush or drizzle maple syrup over the tofu slices and cook for another minute to glaze.
Remove from heat and plate the tofu French toast.
Top with fresh berries and a dusting of powdered sugar if desired.
Drizzle with extra maple syrup and serve warm.
Notes
Use black salt for an eggy flavor, or regular salt if unavailable.
Adjust sweetness by varying the amount of maple syrup used.
