3/4cup maraschino cherries, drained, patted dry, and chopped
1 teaspoon vanilla extract
Pinch of salt
Instructions
Line an 8×8-inch baking dish with parchment paper for easy removal.
Drain maraschino cherries thoroughly and pat dry with paper towels. Chop into small pieces and set aside.

Stir in vanilla extract and a pinch of salt.
Fold in the chopped cherries, mixing just until evenly distributed.
Pour the fudge mixture into the prepared pan and smooth the top with a spatula.
Refrigerate for at least 2 hours or until firm.
Once set, lift the fudge from the pan using the parchment paper and cut into squares.
Notes
For a festive touch, top with sprinkles or crushed peppermint before chilling.
Use parchment paper for easy cleanup and neater slices.
Let fudge sit at room temperature for 10–15 minutes before serving if a softer texture is preferred.
Store in an airtight container in the fridge for up to 2 weeks or freeze for up to 2 months.
