Mediterranean Hummus is a creamy chickpea dip enhanced with classic Mediterranean toppings like feta, olives, herbs, and olive oil. It’s a savory, vibrant dish ideal for sharing as an appetizer or mezze.

Ingredients

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1/4 cup tahini
  • 1 clove garlic
  • 2 tablespoons lemon juice
  • 23 tablespoons olive oil (plus more for topping)
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 cup crumbled feta cheese
  • 1/4 cup Kalamata and green olives, chopped
  • 1 tablespoon fresh parsley or oregano, chopped
  • Optional: sumac or paprika for garnish

Instructions

  1. Drain and rinse the chickpeas thoroughly.
  2. In a food processor, blend chickpeas, tahini, lemon juice, garlic, 2 tablespoons olive oil, cumin, and salt until smooth. Add a splash of water or more oil to adjust consistency.
  3. Spoon the hummus into a serving bowl and use the back of a spoon to create a swirl on the surface.
  4. Top with a drizzle of olive oil, crumbled feta, chopped olives, and fresh herbs.
  5. Garnish with sumac or paprika if desired. Serve with warm pita bread, crackers, or vegetable sticks.
