1/2 cup (1 stick) unsalted butter
1 cup granulated sugar
2 large eggs
1 tsp vanilla extract
1/3 cup unsweetened cocoa powder
1/2 cup all-purpose flour
1/4 tsp salt
1/4 tsp baking powder
1/4 cup unsalted butter (for mint layer)
2 cups powdered sugar (for mint layer)
1–2 tbsp milk (for mint layer)
1/2 tsp peppermint extract (for mint layer)
Green food coloring (optional)
3/4 cup semisweet chocolate chips (for topping)
3 tbsp unsalted butter (for topping)
Instructions
Preheat oven to 350°F (175°C) and grease an 8×8-inch baking pan.
In a saucepan, melt 1/2 cup butter. Remove from heat and stir in sugar, eggs, and vanilla.
Beat in cocoa, flour, salt, and baking powder. Spread batter into prepared pan.
Bake for 20-25 minutes or until a toothpick inserted comes out with a few moist crumbs. Let cool completely.
For the mint layer, beat 1/4 cup butter with powdered sugar, milk, peppermint extract, and green food coloring (if using) until smooth and spreadable.
Spread mint mixture evenly over cooled brownies. Refrigerate for 30 minutes.
Melt chocolate chips with 3 tbsp butter in the microwave or over a double boiler, stirring until smooth.
Pour chocolate topping over mint layer and spread evenly. Chill until set.
Cut into squares and serve.
Notes
Adjust mint extract to taste—start with less if you’re unsure.
For clean layers, refrigerate well before cutting.
Use high-quality chocolate for the ganache topping.
