A rich and savory miso-glazed salmon topped with crispy nori and fresh microgreens for an elegant, umami-packed dish.

Ingredients

  • 4 salmon fillets (6 oz each)
  • 2 tbsp white miso paste
  • 1 tbsp soy sauce
  • 1 tbsp mirin
  • 1 tbsp rice vinegar
  • 1 tbsp honey or maple syrup
  • 1 tsp grated fresh ginger
  • 1 tsp sesame oil
  • 1 sheet nori, cut into thin strips
  • 1 tbsp toasted sesame seeds
  • 1 cup microgreens
  • 1 tbsp neutral oil for searing
  • Salt and black pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Season salmon lightly with salt and pepper.
  2. Whisk together miso paste, soy sauce, mirin, rice vinegar, honey, ginger, and sesame oil.
  3. Heat neutral oil in an oven-safe skillet over medium-high heat. Sear salmon skin-side down for 3–4 minutes.
  4. Flip salmon and brush generously with miso glaze.
  5. Transfer skillet to the oven and bake 6–8 minutes until cooked through and caramelized.
  6. Brush with remaining glaze once out of the oven.
  7. Top with crispy nori strips, sesame seeds, and microgreens.
  8. Serve immediately.

Notes

  • Broil for 1–2 minutes for deeper caramelization.
  • Use red miso for a stronger flavor profile.
  • Serve with warm rice or fresh sautéed greens.
