- 4 salmon fillets (6 oz each)
- 2 tbsp white miso paste
- 1 tbsp soy sauce
- 1 tbsp mirin
- 1 tbsp rice vinegar
- 1 tbsp honey or maple syrup
- 1 tsp grated fresh ginger
- 1 tsp sesame oil
- 1 sheet nori, cut into thin strips
- 1 tbsp toasted sesame seeds
- 1 cup microgreens
- 1 tbsp neutral oil for searing
- Salt and black pepper to taste
- Preheat oven to 400°F (200°C). Season salmon lightly with salt and pepper.
- Whisk together miso paste, soy sauce, mirin, rice vinegar, honey, ginger, and sesame oil.
- Heat neutral oil in an oven-safe skillet over medium-high heat. Sear salmon skin-side down for 3–4 minutes.
- Flip salmon and brush generously with miso glaze.
- Transfer skillet to the oven and bake 6–8 minutes until cooked through and caramelized.
- Brush with remaining glaze once out of the oven.
- Top with crispy nori strips, sesame seeds, and microgreens.
- Serve immediately.
Notes
- Broil for 1–2 minutes for deeper caramelization.
- Use red miso for a stronger flavor profile.
- Serve with warm rice or fresh sautéed greens.
