Ingredients

Scale
  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar (for crust)
  • 1/2 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar (for filling)
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/4 cup sour cream
  • 1 tbsp all-purpose flour
  • 1 1/2 cups mixed berries (blueberries, raspberries, sliced strawberries, blackberries)
  • 1 tbsp granulated sugar (optional, for topping)

Instructions

  1. Preheat oven to 325°F (160°C). Line an 8×8-inch baking pan with parchment paper, leaving overhang for easy removal.
  2. Mix graham cracker crumbs, 1/4 cup sugar, and melted butter in a bowl. Press mixture firmly into the bottom of the pan to form the crust. Bake for 8–10 minutes, then cool slightly.
  3. In a large bowl, beat cream cheese until smooth. Add 1/2 cup sugar and beat until combined.
  4. Mix in eggs one at a time, then add vanilla, sour cream, and flour. Beat until just smooth.
  5. Pour cheesecake mixture over the cooled crust and spread evenly.
  6. Scatter mixed berries on top and gently press them into the surface. Sprinkle with 1 tbsp sugar if desired.
  7. Bake for 35–40 minutes, or until the center is just set and slightly jiggly. Do not overbake.
  8. Cool completely, then refrigerate for at least 3 hours or until firm.
  9. Lift out of the pan using parchment overhang and slice into bars. Serve chilled.

Notes

  • Use fresh or frozen berries. If using frozen, do not thaw before adding.
  • For clean slices, wipe the knife between cuts.
  • Bars can be made a day ahead and stored in the refrigerator.
  • Add a lemon zest to the filling for extra brightness.
