  • 1 cup mushrooms (cremini or button), finely chopped
  • 2 cloves garlic, minced
  • 1 cup shredded cheese (mozzarella, Swiss, or cheddar)
  • 2 tablespoons butter or olive oil
  • Salt and pepper to taste
  • 1 tablespoon fresh herbs (thyme, parsley, or rosemary), chopped
  • Toothpicks or kitchen twine for securing

Instructions

  1. Preheat oven to 190 °C (375 °F).
  2. Butterfly chicken breasts and season inside and out with salt and pepper.
  3. Sauté mushrooms and garlic in butter until liquid evaporates and mushrooms are golden.
  4. Stir in herbs and cheese, then let the filling cool slightly.
  5. Fill each chicken breast with the mushroom-cheese mixture and secure with toothpicks or twine.
  6. Sear stuffed chicken in a hot pan with oil until golden on each side.
  7. Transfer to oven and bake for 15–20 minutes until internal temperature reaches 74 °C (165 °F).
  8. Rest for 5 minutes before slicing and serving.
