No-Bake Chocolate Ganache Cheesecake Bars are a rich and decadent dessert featuring a buttery cookie crust, creamy chocolate cheesecake filling, and a smooth ganache topping—all without turning on the oven.

Ingredients

  • 2 cups chocolate cookie crumbs (e.g., Oreos, crushed)
  • 1/2 cup unsalted butter, melted
  • 16 oz (2 packages) cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 cup semi-sweet chocolate chips, melted and slightly cooled
  • 1 cup heavy cream (divided)
  • 1 cup semi-sweet chocolate chips (for ganache)

Instructions

  1. Line an 8×8-inch baking dish with parchment paper, leaving overhang on the sides.
  2. In a bowl, mix cookie crumbs and melted butter until well combined. Press mixture firmly into the bottom of the dish to form the crust. Chill in the fridge while preparing filling.
  3. In a large bowl, beat cream cheese, sugar, and vanilla until smooth and fluffy.
  4. Mix in the melted chocolate and 1/2 cup of heavy cream until well incorporated.
  5. Spread the chocolate cheesecake filling over the chilled crust and smooth the top.
  6. In a small saucepan, heat the remaining 1/2 cup of heavy cream until just simmering. Pour over 1 cup of chocolate chips and let sit for 1–2 minutes.
  7. Stir the mixture until smooth and glossy to make the ganache.
  8. Pour ganache over the cheesecake layer and spread evenly.
  9. Refrigerate for at least 4 hours, or until fully set. Cut into bars before serving.

Notes

  • Use full-fat cream cheese for best texture.
  • Bars can be made a day ahead and stored chilled.
  • Top with sea salt, berries, or chocolate shavings for garnish.
