1 cup rolled oats
1/2 cup creamy peanut butter
1/3 cup honey or maple syrup
1/4 cup ground flaxseed
1/4 cup mini chocolate chips
1/2 tsp vanilla extract
Pinch of salt
Instructions
In a medium bowl, combine oats, peanut butter, honey or maple syrup, flaxseed, vanilla extract, and salt.
Stir until the mixture is well combined and sticky.
Fold in the mini chocolate chips.
Refrigerate for 20–30 minutes to firm up the mixture.
Once chilled, roll into 1-inch balls using your hands.
Store in an airtight container in the refrigerator for up to 1 week or freeze for longer storage.
Notes
If the mixture is too sticky, add a few more oats. If too dry, add a bit more peanut butter or honey.
Customize with shredded coconut, chopped nuts, or chia seeds.
Use sunflower seed butter for a nut-free version.
