4 boneless, skinless chicken breasts
1/2 cup orange juice
2 tablespoons Dijon mustard
1 tablespoon olive oil
2 cloves garlic, minced
1/2 teaspoon salt
1/4 teaspoon black pepper
1 head cauliflower, grated into rice-sized pieces
2 tablespoons fresh parsley, chopped
1 tablespoon fresh cilantro, chopped
1 tablespoon olive oil (for cauliflower rice)
1 clove garlic, minced (for cauliflower rice)
Salt and pepper to taste (for cauliflower rice)
Instructions
In a bowl, whisk together orange juice, Dijon mustard, olive oil, minced garlic, salt, and pepper.
Place chicken breasts in a resealable bag or shallow dish and pour the marinade over them. Let marinate for at least 30 minutes or up to 2 hours in the refrigerator.
Preheat a skillet or grill pan over medium heat. Remove chicken from marinade and cook for 6-7 minutes on each side or until fully cooked and golden brown.
Meanwhile, heat 1 tablespoon olive oil in a large skillet over medium heat. Add garlic and sauté for 30 seconds.
Add grated cauliflower and cook for 5-7 minutes, stirring frequently, until tender.
Stir in chopped parsley, cilantro, salt, and pepper. Cook for an additional 1-2 minutes.
Serve chicken breasts over herbed cauliflower rice and drizzle with any remaining pan juices.
Notes
Chicken can be grilled or baked for variation.
Cauliflower rice can be prepared in advance and stored in the fridge.
For extra flavor, add a splash of lemon juice to the cauliflower rice.
