4 cod fillets (about 6 oz each)
2 tablespoons olive oil
2 tablespoons butter
2 cloves garlic, minced
1 tablespoon fresh parsley, chopped
1 tablespoon fresh dill, chopped
1 tablespoon fresh chives, chopped
1 tablespoon lemon juice
Salt, to taste
Black pepper, to taste
Lemon wedges, for serving
Instructions
Pat the cod fillets dry with paper towels. Season both sides with salt and black pepper.
Heat olive oil in a large skillet over medium-high heat.
Carefully add the cod fillets to the pan, skin-side down if applicable. Cook for 3–4 minutes without moving, until golden brown.
Flip the fillets and add butter and minced garlic to the pan. Cook for another 2–3 minutes, basting with the butter until the fish is opaque and flakes easily with a fork.
Remove the skillet from heat. Drizzle the fillets with lemon juice and sprinkle with fresh parsley, dill, and chives.
Serve immediately with lemon wedges on the side.
Notes
Ensure the pan is hot before adding fish to get a good sear.
Do not overcrowd the pan; cook in batches if necessary.
