Pan-Seared Pork Chops with Garlic and Sage Butter are juicy, golden-brown chops infused with rich, aromatic flavor from fresh sage and garlic-infused butter.

Ingredients

  • 4 bone-in pork chops (about 1 inch thick)
  • Salt and black pepper to taste
  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 3 cloves garlic, smashed
  • 68 fresh sage leaves
  • 1 teaspoon fresh lemon juice (optional)

Instructions

  1. Pat pork chops dry and season generously with salt and pepper on both sides.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Place pork chops in the skillet and sear for 3–4 minutes on one side until golden brown. Flip and sear for another 3–4 minutes or until internal temperature reaches 145°F (63°C).
  4. Reduce heat to medium-low. Add butter, smashed garlic, and sage leaves to the skillet.
  5. Tilt the skillet slightly and use a spoon to baste the pork chops with the melted garlic-sage butter for 1–2 minutes.
  6. Remove pork chops from the skillet and let rest for 5 minutes. Drizzle with lemon juice if desired before serving.

Notes

  • Let pork chops come to room temperature before cooking for even searing.
  • Do not overcrowd the pan; cook in batches if needed.
  • Pair with roasted vegetables, mashed potatoes, or a simple salad.
  • Basting with butter adds flavor and keeps the meat moist.
