Ingredients

Units Scale
  • 4 bone-in or boneless pork chops
  • 2 fresh peaches, sliced
  • 34 sprigs fresh thyme
  • 2 garlic cloves, minced
  • 1 tbsp olive oil
  • 1 tbsp unsalted butter
  • 1/3 cup chicken broth or white wine
  • 1 tsp balsamic vinegar or lemon juice (optional)
  • Salt and black pepper to taste

Instructions

  1. Season pork chops with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Sear pork chops for 4–5 minutes per side until golden brown and cooked through. Remove and set aside.
  4. Add butter to the skillet, then sauté garlic for 30 seconds.
  5. Add sliced peaches and thyme sprigs; cook for 2–3 minutes until peaches soften slightly.
  6. Deglaze the skillet with chicken broth or white wine, scraping up any browned bits. Stir in balsamic vinegar or lemon juice if using.
  7. Return pork chops to the pan and spoon the peach mixture over the top. Simmer for 2–3 minutes to blend flavors.
  8. Serve hot, garnished with extra thyme if desired.

Notes

  • Substitute nectarines or apricots for peaches based on seasonality.
  • Add smoked paprika or cinnamon for depth of flavor.
  • A splash of cream at the end makes the sauce richer.
  • Pork tenderloin medallions can be used in place of pork chops.
  • Pair with rice, roasted potatoes, or salad for a complete meal.
