Peach Chicken Skillet is a sweet and savory one-pan dish that pairs juicy peaches with tender chicken breasts in a flavorful glaze, perfect for a summer meal.
Heat olive oil in a large skillet over medium heat. Sear chicken for 4-5 minutes on each side until golden brown and cooked through. Remove and set aside.
Add garlic to the skillet and sauté for 30 seconds.
Add sliced peaches, chicken broth, honey, Dijon mustard, apple cider vinegar, and thyme. Stir and simmer for 3-5 minutes.
Return chicken to the skillet and coat with the peach glaze. Simmer for another 2-3 minutes.
Add butter for a richer sauce, if desired. Adjust seasoning as needed.
Serve warm, garnished with additional thyme if desired.

Use ripe but firm peaches for best texture.
