Peanut Butter Coconut Truffles are creamy, no-bake treats made with a blend of peanut butter, shredded coconut, and a touch of sweetness, then dipped in rich chocolate. These indulgent bites are easy to make and ideal for holiday gifting or party platters.

  • 1 cup creamy peanut butter
  • 1/2 cup powdered sugar
  • 1 1/2 cups sweetened shredded coconut
  • 1/2 tsp vanilla extract
  • 8 oz semi-sweet or dark chocolate, chopped (or chocolate chips)
  • 1 tsp coconut oil (optional, for smoother coating)

Instructions

  1. In a medium bowl, mix together peanut butter, powdered sugar, shredded coconut, and vanilla extract until fully combined.
  2. Roll the mixture into 1-inch balls and place them on a parchment-lined baking sheet.
  3. Freeze the truffles for 20–30 minutes until firm.
  4. Meanwhile, melt chocolate and coconut oil (if using) in a microwave-safe bowl in 30-second intervals, stirring until smooth.
  5. Dip each chilled truffle into the melted chocolate, allowing excess to drip off, and place back on the baking sheet.
  6. Optional: Sprinkle with additional coconut or sea salt before the chocolate sets.
  7. Refrigerate until the chocolate is fully set, about 15–20 minutes.

Notes

  • Use natural peanut butter for a less sweet version, but chill the dough longer as it’s softer.
  • Store truffles in an airtight container in the fridge for up to 2 weeks.
  • Perfect for making ahead and freezing for gift boxes or dessert trays.
