  • 3/4 cup powdered sugar
  • 1 cup heavy cream
  • 1 tsp vanilla extract

  2. Add the peanut butter and powdered sugar, mixing until well combined.
  3. In a separate bowl, whip the heavy cream with vanilla extract until stiff peaks form.
  4. Gently fold the whipped cream into the peanut butter mixture until light and smooth.
  5. Optional: Add a layer of crushed cookies or chocolate base into the bottom of serving cups.
  6. Spoon or pipe the mousse evenly into 6 individual cups.
  7. Chill the cups in the refrigerator for at least 1 hour.
  8. Before serving, garnish with desired toppings such as chocolate shavings, chopped peanuts, or caramel drizzle.

Notes

  • Chill for longer than 1 hour for a firmer set and deeper flavor.
  • Use well-stirred natural peanut butter if using the natural variety.
  • These can be made ahead and stored covered in the fridge for up to 4 days.
  • For a frozen treat, freeze the mousse and let sit at room temp 10 minutes before serving.
  • A cookie or pretzel base adds a great crunchy contrast to the creamy mousse.
