1/2cup natural peanut butter
1/4cup honey or maple syrup
2 tablespoons ground flaxseed
2 tablespoons chia seeds
2 tablespoons sesame seeds
1/4 cup mini chocolate chips (optional)
1/2 teaspoon vanilla extract
Pinch of salt
Instructions
In a medium bowl, combine oats, flaxseed, chia seeds, sesame seeds, and salt.
Add peanut butter, honey (or maple syrup), and vanilla extract. Mix well until everything is evenly combined.
If using, fold in mini chocolate chips.
Chill the mixture in the refrigerator for 15–20 minutes to make it easier to roll.
Using your hands or a small scoop, form the mixture into 1-inch balls.
Store in an airtight container in the refrigerator for up to one week or freeze for longer storage.
Notes
Use tahini instead of peanut butter for a sesame-forward flavor.
Add chopped dates or dried fruit for extra sweetness and texture.
Adjust the consistency with more oats or nut butter as needed.
