These peanut butter truffles are creamy, rich, and coated in smooth chocolate. They’re the perfect bite-sized dessert for peanut butter lovers!

Ingredients

  • 1 cup creamy peanut butter
  • 1/2 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 tsp vanilla extract
  • 2 cups chocolate chips (dark or milk)
  • 1 tbsp coconut oil or shortening
  • Crushed peanuts for garnish (optional)

Instructions

  • In a bowl, mix peanut butter, butter, powdered sugar, and vanilla until smooth.
  • Roll into small balls and place on a lined baking sheet. Freeze for 30 minutes.
  • Melt chocolate and coconut oil in the microwave in 30-second bursts, stirring until smooth.
  • Dip each peanut butter ball into the melted chocolate, coating evenly.
  • Sprinkle with crushed peanuts and let set on parchment paper. Chill until firm.
