This Peruvian grilled chicken is juicy, smoky, and packed with bold spices, served with a vibrant green sauce that adds a fresh, zesty kick!

Ingredients

  • 4 bone-in, skin-on chicken thighs
  • 2 tbsp olive oil
  • 2 tbsp white vinegar
  • 2 tsp smoked paprika
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1 tsp oregano
  • 1 tsp salt
  • 1/2 tsp black pepper

 

  • 1/2 tsp cayenne pepper

Instructions

  • Marinate the chicken: Mix olive oil, vinegar, and spices. Coat chicken and marinate for at least 2 hours.
  • Grill: Preheat grill to medium-high heat. Cook chicken for 6-8 minutes per side until fully cooked.
  • Make the sauce: Blend all sauce ingredients until smooth.
