Instructions

  1. Cook the tortellini according to package directions. Drain and rinse with cold water to cool.
  2. In a large bowl, combine the cooled tortellini, cherry tomatoes, and pesto.
  3. Add olive oil if desired, and toss until the tortellini is evenly coated.
  4. Season with salt and black pepper to taste.
  5. Sprinkle with grated Parmesan cheese and gently toss again.
  6. Chill for 15–30 minutes before serving or serve at room temperature.
  7. Garnish with fresh basil leaves, if using.
