Rainbow Sprinkle Cake Bars are soft, buttery dessert bars packed with colorful sprinkles and a rich vanilla flavor—perfect for parties, birthdays, or just a cheerful treat any day.

  • 1/2 cup (113g) unsalted butter, melted
  • 1 cup (200g) granulated sugar
  • 2 large eggs
  • 1 tbsp vanilla extract
  • 1 1/4 cups (156g) all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup rainbow sprinkles (plus extra for topping)

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper or grease lightly.
  2. In a large bowl, whisk together melted butter and sugar until combined.
  3. Add eggs and vanilla extract, mixing until smooth.
  4. In a separate bowl, whisk together flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  6. Fold in the rainbow sprinkles.
  7. Spread the batter evenly into the prepared pan and top with extra sprinkles.
  8. Bake for 25–28 minutes, or until the edges are lightly golden and a toothpick inserted in the center comes out clean.
  9. Let cool completely in the pan before slicing into bars.

Notes

  • Do not overmix the batter to keep the bars soft and tender.
  • Use jimmies (long sprinkles) to prevent color bleeding.
  • Store in an airtight container at room temperature for up to 4 days.
  • Double the recipe and use a 9×13 pan for a larger batch.
