Ingredients

  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 8 oz cream cheese, softened
  • 1/3 cup granulated sugar (for filling)
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/4 cup raspberry jam or puree
  • Optional: powdered sugar for dusting

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch pan with parchment paper.
  2. In a medium bowl, mix flour, 1/4 cup sugar, and softened butter until a crumbly dough forms.
  3. Press dough evenly into the bottom of the pan. Bake for 12–15 minutes until lightly golden. Let cool slightly.
  4. In a separate bowl, beat cream cheese, 1/3 cup sugar, egg, and vanilla extract until smooth.
  5. Spread the cream cheese mixture evenly over the baked crust.
  6. Drop spoonfuls of raspberry jam over the top and swirl gently with a knife.
  7. Bake for 30–35 minutes, until the filling is set and slightly golden around the edges.
  8. Cool completely, then chill in the refrigerator for at least 2 hours.
  9. Slice into bars and dust with powdered sugar before serving, if desired.

Notes

  • Add lemon zest to the cream cheese filling for a citrus twist.
  • Use fresh raspberries mashed with a bit of sugar as a substitute for jam.
  • For clean slices, use a warm, sharp knife and wipe it clean between cuts.
