1 tbsp cocoa powder
1/2 tsp baking soda
1/2cup butter, softened
3/4cup sugar
1 egg
1/2cup buttermilk
1 tsp vanilla extract
1 tbsp red food coloring
1/2cup cream cheese frosting
Fresh strawberries for topping
Instructions
Preheat oven to 350°F (175°C). Line a muffin tin with cupcake liners.
In a bowl, mix flour, cocoa powder, and baking soda.
Beat butter and sugar, then add egg, buttermilk, vanilla, and food coloring.
Combine with dry ingredients and mix until smooth.
Fill cupcake liners ¾ full and bake for 18-20 minutes.
Frost with cream cheese frosting and top with strawberries.
