Refreshing Cucumber Radish Salad with Herbed Yogurt is a light, crisp dish featuring crunchy cucumbers and peppery radishes tossed in a tangy, creamy yogurt dressing with fresh herbs. It’s perfect as a side for grilled meats or a cooling snack on a hot day.

Ingredients

  • 1 cup radishes, thinly sliced
  • 1/2 cup plain Greek yogurt
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil
  • 1 tablespoon fresh dill, chopped
  • 1 tablespoon fresh chives, chopped
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. In a large bowl, combine the sliced cucumbers and radishes.
  2. In a separate small bowl, whisk together the Greek yogurt, lemon juice, olive oil, dill, chives, salt, and pepper until smooth.
  3. Pour the herbed yogurt dressing over the cucumber and radish mixture.
  4. Toss gently until the vegetables are well coated.
  5. Refrigerate for at least 15 minutes before serving to allow flavors to meld.
  6. Serve chilled, garnished with extra herbs if desired.
