Ingredients

  • 4 cups seedless watermelon, cubed
  • 1 large cucumber, sliced or diced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup fresh mint or basil leaves, chopped
  • 1/4 small red onion, thinly sliced (optional)
  • 2 tbsp fresh lime or lemon juice
  • 1 tbsp olive oil
  • Salt and black pepper to taste

Instructions

  1. Cube the watermelon and slice or dice the cucumber. Thinly slice the red onion if using, and soak it briefly in cold water to mellow the flavor, then drain.
  2. In a large mixing bowl, combine watermelon, cucumber, and red onion.
  3. Top with crumbled feta and chopped herbs (mint or basil).
  4. Drizzle with lime or lemon juice and olive oil. Season with salt and pepper.
  5. Toss gently to combine and serve immediately while fresh and chilled.
