1 pound smoked sausage, sliced
2 medium sweet potatoes, peeled and cubed
1 red bell pepper, chopped
1 yellow bell pepper, chopped
1 small red onion, chopped
1 teaspoon garlic powder
1/2 teaspoon smoked paprika
Salt and black pepper to taste
Fresh parsley, chopped (optional, for garnish)
Instructions
Preheat oven to 425°F (220°C).
In a large oven-safe skillet or baking sheet, combine sliced sausage, cubed sweet potatoes, bell peppers, and red onion.
Drizzle with olive oil and sprinkle with garlic powder, smoked paprika, salt, and pepper.
Toss everything together to coat evenly.
Roast in the oven for 25–30 minutes, stirring halfway through, until sweet potatoes are tender and slightly caramelized.
Remove from oven and garnish with fresh parsley if desired. Serve hot.

Use any variety of sausage you prefer — chicken, turkey, or plant-based.
